Roasted Baby Carrots

I was asked by a friend if I had a recipe for the recipe for the carrots featured in my Spicy Honey Chicken dish, so I decided to whip one up really quick. It’s a quick and easy side dish to make anytime. The carrots provide their own naturalĀ flavor so you don’t have to add too many seasonings.

  1. Preheat Oven to 375 degrees. Place carrots on a roasting pan in a single layer. Drizzle olive oil over the carrots, along with the salt and pepper. Place in oven for 40 minutes, or until carrots are fork tender. Remove and place carrots in a bowl. Add the honey and lightly toss the carrots. Serve.
