One of my favorite shows on Food Network is The Pioneer Woman. The inspiration for this dish came from a recent episode where she made a Macaroni and Cheese with 4 Cheeses. It looked very creamy and delicious, so I figured why not make my own version for the masses!
Start out by boiling your Cavatappi Noodles for about 8-10 or until they are Al Dente (Don't Overcook!)
In a Dutch Oven or a medium sized pot, combine the heavy cream and butter. Cook on low until mixture is hot, but not boiling.
Add cheeses one at a time into the pot allowing the cheese to melt somewhat before adding the next cheese and stir until sauce is smooth. Stir in seasonings as well.
(Tip: It doesn't have to be 100% smooth it will adhere to the noodles either way)
Drain the noodles (DO NOT RINSE) and immediately add to the cheese sauce. Stir until all of the noodles are covered completely. Serve Immediately
Optional: Garnish with extra cheese on top for added effect
