One Pan Mozzarella Chicken Alfredo

Are you tempted by the take-out menu after a hard day of working? Do you get greeted by hungry mouths instead of peace and quiet? Well don’t pull your hair out just yet! My Mozzarella Chicken Alfredo can be made in under 1 hour, and provide you with that peace and quiet you so desperately need (along with that second glass of wine).
Best of all this recipe is very economically friendly (I shop at Aldi’s) so you can have that Olive Garden meal without that Olive Garden price tag.

  1. Preheat Oven to 400 degrees. Lightly grease a glass baking dish prior to adding chicken. Generously season both sides of the chicken breast, cover with foil and place in oven for about 20 minutes. Cut mozzarella ball into four slices and set aside. (This will be used later in the recipe)
  2. In a large cooking pan, bring water to a boil and place pasta in the pan. Cook as directed on the box. Drain and rinse with HOT water. In the same pan, add both cans of Alfredo Sauce. Stir until just warm, and then add the noodles. Stir until fully covered. Keep stove on low so the pasta and sauce won't burn.
  3. After 20 minutes, turn the oven up to broil and remove the foil. Place a slice of fresh mozzarella each chicken breast (4 in total) Cook for an additional 10 minutes to allow the mozzarella to fully melt over the chicken. Remove and place into the pan of pasta. Garnish and Serve immediately!
