Can $20 feed a family of four? YES! I’m here to tell you that you can still eat a great meal for less than what it costs to sit in that fast food restaurant. Aldi’s has a fantastic selection of foods that cater to everyone from the organic to the gluten-free! The best part is that you will still have money in your pocket along with a full grocery cart.
This meal including the items purchased came to a total of $16.30, which is $4.08/person
Preheat oven to 400. Rinse and pat dry the chicken breasts. Cut each one in half and cut away any fat.
In 2 separate bags, add 2 cups of flour and 2 cups of Italian bread crumbs. In a medium bowl, crack 2 eggs and whisk until blended.
Take 1 chicken breast and coat both sides with flour, then dredge each side through the egg wash prior to coating with breadcrumbs. Repeat until all pieces are coated.
In a large skillet, heat 3 tbsp. of olive oil on medium-high. Cook chicken on both sides (2 minutes per side) Remove chicken and place in baking dish. Pour 1/2 of the marinara sauce into the dish before placing in the oven.
Cook for 20 minutes. Turn oven to broil and place mozzarella slice on each piece of chicken. Cook an additional 5 minutes or until cheese is melted. Remove from oven and cool for 5-10 minutes. Garnish and serve over your preferred noodle. I used spaghetti. (Follow instructions on box)
